Drum Simulator
Over on the QJ forums, Vermillion has just released Drum Simulator v0.1. As can probably be gathered just by looking at the title, this is a LUA-coded drum simulator for the PSP.
Right now, you can only play one sound at a time (no hitting the high-hats while banging on the snare yet)

After releasing his Drum Simulator v0.2 just yesterday, Vermillion is back once again with another music-themed homebrew app called Instrulator, the Instrument Simulator
GuitaHelper
Guitargod1134 is back with a new version of GuitarHelper. While this new version doesn't include the much-awaited tab reader just yet ("it was quite buggy and not all the text was printed so i decided to just remove it"), it does come with its own set of new features.

Joel Van has released a new upgrade for guitargod1134's GuitarHelper application, which teaches people the basics of using a guitar. This version, called GuitarHelper v0.5a, has a ton of additional features as well, and comes in two different modes depending on your firmware.
